摘要:为了明确冷藏温度下牛乳中单增李斯特菌数的变化规律,将单增李斯特菌接种在一种市售乳制品饮料中并于4℃下保存,在乳制品保质期内对单增李斯特菌进行计数,并通过Gompertz模型、Baranyi模型对牛乳中的单增李斯特菌数的变化进行拟合。由数学检验参数平方根误差(RMSE)、偏差因子(BF)、准确性因子(AF)和标准预测误差(SEP)比较结果显示,Gompertz模型拟合性和准确性高,可作为牛乳中单增李斯特失活模型推广应用。 关键词 单增李斯特菌;失活模型;数学检验
Abstract:In order to study the variation of active listeria monocytogenes numbers in milk under cold temperature. Add listeria monocytogenes in a dairy drinks and preserve it under 4℃.Active LM numbers were detected during the shelf life.Then Gompertz, Baranyi models were applied to curves of active LM. With lower root-mean-squares error(RMSE) and acceptable bias factor(BF) and accuracy factor(AF)and standard error of prediction(SEP).
