摘要:本文针对以校园食堂为代表的高校后勤管理现状的分析与研究，以江南大学蠡湖校区的食堂管理为案例研究，对食堂就餐时排长队、等半天买饭难、打饭流程繁复、食堂内就餐环境不理想等相关问题，通过结合工业工程方法研究和人因工程学等相关专业理论分析研究及解决这一问题。

　　　本文主要运用工业工程中工作研究理论中的程序分析、操作分析和动作分析，人因工程学中作业环境的相关理论和作业空间优化理论与方法，结合问卷调查法、现场观察法和访谈法来总结分析师生对蠡湖校区校园食堂服务的满意度，发现相关问题；通过对校园食堂工作环境区域及工作人员的工作流程、操作动作进行观察分析，找出缺陷地方、无效动作及不合理动作，结合实际，进行分析研究，提出相应的改进方案，并制定出标准作业流程以规范提高食堂窗口工作人员的工作效率，减少学生就餐时等待时间，提高食堂的服务效率；并针对食堂内部作业环境和师生就餐区域环境提出建议和改进方案，并进一步提高师生的满意度。

ABSTRACT:Represented by campus canteen of colleges and universities, this paper analyses the current situation of the logistics management and research, with Lihu campus of jiangnan university canteen management for the case study, the dining hall meal long queues and wait half a day to buy rice, rice process heavy and complicated, the cafeteria repast environment is not ideal and relevant problems, by combining the industrial engineering method research and human factors engineering and other related professional research and theoretical analysis to solve this problem.

　　In this paper, by using the theory of work studies in industrial engineering program analysis, operation analysis, and action analysis, human factors engineering in the related theory of the working environment and work space optimization theory and methods, combined with the questionnaire survey to analyze the teachers and students of Lihu lake campus of campus canteen service satisfaction, find related problems; Through to the campus cafeteria area and staff working process, the operation action observation analysis, find out where defects, invalid action and unreasonable action, combined with the actual, analysis and study, puts forward corresponding improving scheme, and work out a standard process to regulate enhances the working efficiency of the staff canteen window, reduce waiting time when students repast, improve the service efficiency of the canteen; And internal working environment for the dining room and the teachers and students repast area environment put forward Suggestions and improvement scheme, and further improve the teachers' and students' satisfaction.

　　　工业工程（IE）在我国的应用推广尚处在初级阶段，且主要集中于制造企业领域的应用，在高校的后勤管理中，尤其在饮食服务管理中，工业工程方法研究与人因工程同样大有作为，本为以高校食堂的服务效率研究与改进为基点，对以江南大学蠡湖校区食堂的服务进行分析，并提出问题与解决问题，属于结合实际生活应用工业工程的相关知识，具有一定的实践性和相对的可操作性。

　　（1）能够对校园食堂的作业环境、窗口服务现状、作业流程、作业动作等现状进行观测、调研与评价，了解师生的满意度，在分析与评价的基础上结合实际给出相关的建议和优化方案。

　　（2）通过对校园食堂窗口服务状况的分析与改进、对食堂内部作业环境的分析与改进和就餐区域的分析与改进的探究，为其他的食堂管理或者与饮食服务相关的行业提供一些应用工业工程方法研究和人因工程学知识的范例或模板，提供借鉴作用。

　　（3）增强食堂工作人员对工业工程相关知识的认识和把握，使工业工程的知识深入人心，促进食堂工作中重视人的因素，进行人性化管理，进而提高食堂工作人员的工作效率，促进食堂服务质量的提高，最终营造一个健康舒适安全高效的食堂饮食服务环境，使师生享受并乐于在校园食堂就餐。
